Mit fogunk csinálni?

This class will give you the knowledge and confidence to take a whole fish home and make sashimi yourself. You will experience how to breakdown a fresh whole fish from the Kyoto central fish market with a Japanese knife made in Osaka. You will finish this class by creating and enjoying your own sashimi set meal with rice and miso soup.

This class is originally from Osakana, Brooklyn, NY. Lorimer Kyoto is our first cooking class establishment in Japan in a renovated traditional machiya style house.

Tomomi, I am a chef at Lorimer Kyoto. 
Cooking is my life and has changed my life in many ways. I have worked in kitchens in Osaka, NYC (Manhattan, Brooklyn) and now in Kyoto Lorimer. I would be happy to introduce Japanese food culture to people from all over the world. 

Born and raised in New York, Jeremy previously worked as a professional chef in NYC. He moved to Japan a year ago with the opportunity to work and travel in different cities until recently settling in Kyoto this spring.

This store is inspired my other stores in Brooklyn, NY called Okonomi/YUJI Ramen and Osakana. Brooklyn soul meets Japanese tradition at Lorimer Kyoto.

Both the sashimi butchery class and the knife sharpening are excellent. It's a lovely space and Paul is a great teacher. I've been able to successfully apply what I've learned afterwards, which I think it a pretty good measure of a course.

This was the perfect way to end my time in Kyoto. Paul, another chef at the restaurant, coached me through the entire process from whole fish to plated sashimi. The whole staff was in the restaurant and everyone super friendly. I would highly recommend this experience to anyone looking for memorable experience.

Wow! This was amazing! I do a lot of Airbnb experiences and many of them are very basic and cheesy. This one presented a real challenge and learning opportunity. The fish was fresh, the chef was skilled, the environment was very nice. We cut that fish all up to hell and then ate it deliciously with miso soup and rice. I loved the experience. So much fun and a real new skill developed. Oishi!!!

A great skill to learn during our time in Japan. Not only is Jeremy a great (patient) teacher, he is also a skilled cook with a fun story. We enjoyed our time with him and the meal at the end was devoured. Definitely sign up if you’re a home cook!

Paul is very good teacher. He kept an eye on how I was doing and gave guidance along the way. I think the Japanese way of handling fish is quite different from the Cantonese way we do, it was interesting to get a chance to practice. To me, the most difficult part was slicing sashimi - you may not tell how good or poor it is by eyeballing the thickness it but you will know when you eat it. Go try it!

It was incredible and amazing value. You’d pay this much for the lunch alone in most sushi shops!! We had tons of one on one knowledge shared with us that we’ll be taking home and putting to good use. The best kind of souvenir! One of my favorite japan experiences of our trip. They went about an hour over never making anyone feel rushed at all. Lovely, lovely workshop.
