Using a knife from Sakai Takayuki based in Sakai, Osaka where they have more than 600 history of making Japanese knives, you will learn how to sharpen and maintain knives in Japanese ways using different grades of wet stones. You get to take home the knife you sharpened (¥13,500 value) with your name carved on it.

The course was really thorough, going over not just the technique of how to use the whetstones, but what types of whetstones to use for what purpose and about different styles/materials of knives and and differences they bring to the process. I was also given direction to a local shop where I could purchase whetstones to bring home.

Great experience specially if you haven't done it before. The activity is for one hour and held in Kyoto, which can be somewhat desirable if you don't want to move to much or are on a tight schedule. The knifes are from Sakai, which if you are really quite interested in knifes might also worth your while to visit.

This is a fantastic experience for anyone interested in knife sharpening. The skills you learn here will stay with you for life. The location was cool and easy to find. The small class made it very personal. Not to mention you get to take home a beautiful, authentic Japanese knife.
