A tour of the uniquely designed smokehouse is inspired to look like a traditional Scottish building called a cleit. A peat roof and stonewalled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 5 different canapes.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

Hol leszünk?

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

This was a favorite moment of our trip to Scotland. It’s clear John has poured his heart and soul and worked extremely hard to make his plans to produce top quality hot and cold smoked salmon a reality. Meeting him and getting an up close and personal tour of the process followed by an excellent sampling of his top quality product was a complete five star experience. If you love smoked salmon or are just curious about how much hard work goes into a quality product, make a reservation.

Trip adviser has very little reviews so wasn’t sure what to expect however we enjoyed every minute of John's tour. He started by providing us a little bit about his background as a chef and developing his passion for food before settling in Skye. He showed us around his kitchen and explained a little about the art of working with salmon, taste profiles, operating a small kitchen and growing a business before showing us around his take on a traditional Scottish cleit smokehouse. We then came to everyone’s favourite part which was the tasting. John worked in restaurants and it showed on his tasting platter. Everything was prepared to a high quality, spotlessly presented and deep in flavour. The weather was chilled but dry so we ate outside and enjoyed the view. We spotted otters which was an added extra. The majority of the tour is outdoors as the kitchen and cleit is in his garden so wear appropriate clothing to allow for any change in weather. We would highly recommend this experience to learn more about Skye, the history of smoking in the Northern reaches of Scotland and great food.

John was an amazing storyteller and really open about his motivations and techniques. Would recommend this for anyone interested in the behind the scenes of smoking fish or anyone who wants to be entertained in general.

An absolute joy to hear of your journey to get to where you are now in Skye. Felt privileged to see behind the scenes and loved the cleit. We want one in the garden !!!! The tasting plate was exquisite. Thank you. Pam and Caroline.

The tour with John was extraordinary. The stories he told were very personal and inspiring. Starting up a business from zero and being so passionate about it is inspiring. The fantastic food was the cherry on top. If you have the chance to step in, just do it!
