Mit fogunk csinálni?

Do you know Japan’s traditional condiment Koji rice malt? This has an amazing power and science is recently backing the benefits. You will explore both the benefits and Japan’s traditional food culture in this workshop, which consists of 3 parts:

1. Lecture on Koji rice malt: learning the secrets of this traditional magical condiment in Japan!
A certified Koji Meister will talk about the mechanism of Koji with scientific data and her own experience. Koji has scientifically-proved great powers and you will learn how helpful Koji is to feel healthy and happy!

2. Workshop: Making your own condiment using Koji such as salt Koji or shoyu Koji
Participants will make shio (salt) Koji or shoyu (soy sauce) Koji. After making it, you will bring it as your souvenir. In 7-8days, it will complete. Recipes will also be introduced during the session so that you can use the condiment at home.

3. Tasting: Tasting a light meal including miso soup or sweet Koji. Sweet Koji may be smoothie with fruit.
You will taste miso soup made by authentic rare miso, which was made with an over 140-year old method. Besides delicious miso soup, you'll also taste seasonal fruit sweet Koji smoothie!
Other things to note
If you have any type of allergies, let us know in advance. We use fermented food such as miso, shoyu soy sauce and fruit, salt. Koji is rice malt. We don't serve lunch or dinner but offer snacks.

This workshop will be held at a restaurant. The entire workshop will be done in the same space. Participants will experience a part of making food on the table.
