Established in early 2011 by Chef Jody Williams, Buvette Gastrothèque is inspired by European traditions that honor a history of craft and design, where each detail evokes a sense of story, place and delight. Part restaurant, part bar, part café, Buvette combines the elegance of an old world café with the casual nature of a neighborhood eatery. It is a light filled space for an early morning espresso or a long lunch of shared dishes, even a spot for a late night digestif.

Sibling restaurateurs Bunkei and Reika Yo give us a sense of Japanese living in this multilevel space. On the ground floor are tatami-style rooms; on the mezzanine are re-creations of a living room, dining room and library of a Japanese home from the Meiji Era. But the main dining room is where the action is: Diners sit at tables either on the periphery or around a small pond under high ceilings. Chef Koji Nakano is running with the home theme too by offering handmade miso paste, tofu and yuba (soy-milk skin) in dishes like Berkshire pork belly braised in sansho miso; foie gras and poached daikon steak with white miso vinegar; and seared chutoro marinated in garlic soy.

If anyone can claim to be an expert on Neapolitan pizza, it’s Keste’s Roberto Caporuscio: As president of the U.S. branch of the Associazione Pizzaiuoli Napoletani, he’s top dog for the training and certification of pizzaioli (a former dairy farmer and mozzarella maker, he’s also intimately familiar with that most essential cheese). In addition to all the hallmarks of the Neapolitan product—San Marzano tomatoes, doppio zero flour, a scorching-hot wood-burning oven—Caporuscio uses a slow-speed mixer to work his dough. Then, he gently stretches it into a round with his hands, since it’s far too soft for tossing.
