店構えは網代天井の下に6mもの檜のカウンターが設らえられた数寄屋造り。大将は江戸前鮨の名店で研磨を積み10年前に独立し、職人歴は28年になる。演出や飾りが多ければ分かりやすく相手を喜ばせられるところ、大将は「豪華にするより見えない仕事を丁寧に」と握る。煮蛤の半生のような炊き加減やツメの深い味わいがその答え。酢飯には北海道の「ななつぼし」を採用しているが、銘柄にとらわれないよう目隠しをして厳選5種から決めたという一本気。
